i have 1 year work experience with my company, working 35h per week. Next week I’m going to maternity leave. I just looked in my last pay slip and it says total hours worked-1302. Obviously I took holidays off during that year (5 weeks off standard+1 week). Do you have to work 1 year with no holidays to qualify?!!? But the end of this month I will get 109h extra but it won’t add up to required 1560h. I’m still missing 149h. Which is a full month of work. Does it mean I cannot apply?!

Actually pay slip is not a requirement, so I could just have a letter from work with needed hours.
My husband worked while doing studies (in France it’s known as alternance). On his pay sleep it says 1607 h and 1 year experience. We are still debating whether he should go first

You don't need to upload any payslips actually.
Number of hours written on your payslips (Fiche de Paie) are not always reliable, as some companies alter the number of hours depending on paid/unpaid holidays, especially in France.
But if your letter states:

-Job title
-Full time
-35h/week
-with a salary of XXX€
-Since September 2017
-Plus list of duties...

You should be good if you have all the info above. Holidays don't mean you're not eligible, as you're still employed by the company.
The reason why some applicants provide paystubs is because sometimes companies don't write the salary.

Honestly, whether it's your or your husband... The one who gets the best work reference letter with all the required info should be PA. It's critical that PA's work letter be spot on!

Would you say “spot on” letter has at least 80% of main responsibilities listed under NOC? Also alternance is a weird program to describe- full time study/ full time work or part-time study/part time work? His employer is not as shitty as mine and could actually write whatever is asked

I would say 60%-70% is fine.
The alternance in France is weird to describe indeed. Part time study and part time work for a few months, and then full time for the remainder of the program. It's the reason why I think you should see if you can get your work reference letter first.
