Work experience and personal history

Hello everyone,

I am now filling my PR application. In the work history part I only mentioned my Canadian work experience. I work (part-time and based on verbal contracts) as a researchers. I got paid for them. But because it is not possible to get a letter from the people that I worked with I did not include them in my work experience history. Now in personal history, I have to mentioned what did I do. For that time period, do I need to mentioned that I was employed or that I was unemployed? and how can I explain that.
