have to document from the beginning of my relationship until this day, or can I just take certain important parts of our relationship?

Do I have to send photocopied pictures?

do the pictures have to have the date on them?

Does each picture have to have a note on them describing the event and/or moment?

How do I organize all the extra proof? does it just have to be loose in the envelope I send?

Last question: I am mailing the "outland" application forms from Ecuador, so do I have to send it directly to Missisauga, or do I send it to

Bogotá first and they send it to Mississauga for me???

Document from the beginning if you can. If you have photos from the very early days of your relationship, or emails, certainly include them to show how long your relationship has lasted.
If you have a lot of evidence, you don't need to send it all. Showing more evidence about more important parts of your relationship is fine, but do try to include something that shows the beginning.
Do I have to send photocopied pictures?
You can send photos. Many people get their photos printed and send them loose in the envelope they come in from the photographers. You can also print digital photos two to a page (of regular A4 paper) using Word. You certainly do not have to photocopy them, but if you wanted to, make sure the photocopies are colour and good quality.

It is better to include the date and a note explaining who is in the photo, where it was taken, and what the occasion was. If you print the photos on paper using Word, you can write a short explanation beside each one. If your photos are loose, you can write on the back, or have the photos printed with a margin and write on that.
How do I organize all the extra proof? does it just have to be loose in the envelope I send?
Put the papers in some sort of order. Don't just stuff them into the envelope. Basically, you want to make your application as easy to read as possible for the visa officer. There are many ways people have organized their supporting documents. You can put all your proof of a genuine relationship together, number the pages, and then put an index at the front explaining what everything is. You can group similar documents together, put tabs on each section, and include an index explaining each tab.

You mail it to Mississauga.
