If a u.s citizen travels to canada and fills out the form saying they will be staying in canada for two weeks and at customs tells the officer they will be staying two weeks but ends up staying longer. Would they get in trouble when they eventually return to the u.s? Would that affect the sponsorship application?

Deliberately lying to CBSA is not a good idea. However, unless otherwise restricted by either annotation in the passport or by the issuing of a Visitor Record, you can legally stay for up to 6 months.
 
Did the officer restrict the stay for two weeks and said they have to leave in two weeks? Or did the u.s citizen say two weeks, was given the normal 6 months upon entry?
If it was the officer that restricted the stay for two weeks and only gave two weeks upon entry then the u.s citizen should leave to avoid problems in the future.
If the traveler just said two weeks, the officer gave the normal 6 months upon entry, then they can stay longer because sometimes plans change. If they were given six months upon entry then they should leave before the 6 months are up or apply to extend.

I said two weeks and wrote two weeks on the card i had to write on b4 entering Canada. but i feel like staying in canada longer.

Even though i wrote on the declaration card that im staying for just two weeks? This wont be used against me wen i file for sponsorship or try coming back home? Just 100% clarification please.

you were not restricted to two weeks were you by the officer? if you said two weeks and they still gave you 6 months then that's fine theres no problem staying more than two weeks.

No they didnt even stamp my passport wen i arrived in canada. I just wrote on the declaration card i was staying two weeks and told the officer two weeks. But im thinking of staying longer. So long as i leave b4 the 6 months im ok?

if you were not given anything saying you have to leave in two weeks and nothing is written on your passport saying you have to leave in two weeks then the default is 6 months unless told otherwise.
