What not to mention in your travel history

Dear All,

I am applying for a study permit. I am a seafarer with an extensive travel history.
1)
This history also includes a lot of countries which have no stamps on my passport. There exists no evidence that i have visited them. Should i mention them? i have accurate dates of my visits but there is no way i can prove them except by using the official log of my Ship's port calls. I can attach them if needed later but i dont plan to attach them with my study permit cause that would add unnecessary paperwork with my application
2)
I had applied for a Schengen tourist visa and i entered the Schengen zone in France and exited it in Italy. In between i did visit 5 other countries but they have no stamps on my passport. How do you suggest me to proceed with this?
3)
I had visited Canada and USA while working on the cargo ship. I have the exact dates as well. I plan to mention these visits. I hope this is the right thing to do.
