In my cover letter I mentioned my interest in traveling to Toronto from December 23rd to January 5th. My vacations were approved during those days. But I got my visa granted just today (the process was delayed) but I can't travel now because of my work. With that visa Can I travel later on?

You can use the visa as long as is still valid at the time you plan to travel. It is not linked to your original planned trip.
