I am a PR of Canada and my girlfriend is in India and she already got a tourist visa in Dec 2018 (but she never visited canada yet). I am planning to visit India in February and get my court marriage done. I wish to bring her to Canada along with me after the marriage. Now can the immigration officer reject her entry to Canada because she is married now (she wasn't married at the time of her visitor visa application). I am also planning to apply for her PR under the Inland Spousal Sponsorship Program if she successfully enters Canada eith me on that visitor visa. Will that work out?

Yes. If she is asked during entry to Canada if anything has changed she should say that she got married but I won't be an issue. She should arrive with a return ticket that you can cancel and she can't arrive with all of her belongings. She is still a visitor at that point. If you are asked if you are planning on filing for spousal sponsorship you should be honest. Answer the CBSA questions but don't volunteer information if not asked. The bigger problem is the lack of ceremony and only a court wedding. That is atypical for an Indian wedding and so you will have to explain why you only had a court marriage done. I assume you have been dating for at least a few years and have lots of pictures from various times together along with communication records from your phones.
