Visiting Postdoc paid by home institution - which work permit to get?

About me: I am UK and NZ dual-citizen (28F) and currently reside in the UK.

My current situation is that I am a postdoc with a current contract in the UK. In the context of my postdoc, my boss is planning a collaboration which involves sending me to a university in Ontario for one year. All salary, benefits, costs etc will be incurred by my UK lab, so I wouldn't have a contract with the host Canadian university, but I do have a letter offering to host me and formally providing me with a visitor status within the university.

I'm slightly tearing my hair out trying to figure out which work permit to apply for. My first instinct was the employer-specific work permit, however when I launched an application online, it asked for a copy of my employment contract as a mandatory document, which I don't have since I'm not being employed by the university, just hosted. Similarly, I thought of using the Young Professionals IEC because I am eligible for it as an U35 UK national. However, this still requires the employer to submit an employment offer to the Employer Portal, with things such as the salary/benefits etc enumerated, but this doesn't make sense at all because I will be paid from my UK lab.

Could someone please help me understand what I need? (Ideally the fastest option available as we want to get started ASAP)
