Can I apply for visit visa while my Express entry application is still in the pool?

Are their any chances of attending interviews and getting job offer on visit visa? If this is possible it can improve my CRS score.

Very unlikely. Unless you have a very rare skillset which is highly in demand. Only in such cases employers will be ready to apply for LMIA
