I'm a U.S. Citizen with a home in Seattle. I have a boyfriend who is a Canadian Citizen who has an apartment in Vancouver. We go back and forth between each other's homes on a regular basis. Do we need to keep track of the number of on and off days we spend in each other's countries so as not to exceed the 182 day yearly limits in either country?

No - you don't need to keep track. However whether you are allowed into the country as a visitor and for how long is always up to the border official you encounter when you enter. To avoid issues, make sure you carry evidence that demonstrates you have ties to your home country (e.g. proof of employment, proof of property ownership / rental, utility bills, etc.).
