So say I dont get my COPR in the next 6 weeks or so and I fly to be be with my husband on the 3rd of October on my visitor visa - I am a british citizen, can we go to the carrib a week later and return to canada with no issues?

It is possible. Since you are from a visa exempt country there should be no issues, but you never know.

Probably. Have proof of you and your husband's income/assets with you just in case they ask for it.
