Hi,

I am a Canadian citizen living in Canada, and I will be visiting my husband in Portugal. Do I need to inform my VO that I will be visiting my husband for the holidays for 12 days?

Nope, you do not have to inform them.
at least I didn't.
Do keep all proofs from your trip and takes lots of pictures. If the Visa Office asks for any additional relationship proof you can definitely use it.
