My home country is in Caribbean, and I came to Canada with a transit visa and study permit. School is having summer break, and I am planning to vacation in Europe. Do I need to go back to my Caribbean home country first, and book a flight from there? Or can I book a flight from Canada to Europe? How does this work?

You can book from here and visit directly. But to come back you need valid study permit and valid TRV.
