So I’ve had maybe multiple updates on my tracker after my PR application was closed. Does that mean they’re doing something on my application or is it normal? The update was a few months back, though just recently they visited my former employer back in my home country for verification (months after PR approval). So I don’t know if it’s connected or not. So is it normal to get ghost updates in tracker?

What did you see exactly in your PR tracker? If you are referring to the date changes at the top right, that's not related to your application at all. I'd say GUs, IP1/IP2, NA, etc are all as meaningless as they can be. Primarily because it is all made up correlation that no with any authority has backed up.
Did they(IRCC) visited your former employer after you became a PR or before you became a PR?
Yeah top right where it says “Updated:____”

That, my friend, is called confirmation bias. IRCC tweeted about it and said that this is a system date.

It is pretty new. Previously IRCC rarely used to do employment verification.
After I became PR. MONTHS after. It’s very strange. It also happened with someone else from my same home country (I saw a post on different platform). Either someone could have filed a complaint but again that can’t be a co-incidence, a complaint happening to two people almost a few days apart. Maybe some kind of audit or something.
Also one day before the agent’s visit, I received a Advanis Survey email (that I’ve been selected etc) from ircc for feedback, don’t know if it’s linked or not.
Unlikely linked. Likely targeted verification after discovering similar fraud as your profile or reported by someone.
