I received ITA last month and is planning to soft land after receiving my COPR however, I plan to get married next year after completing my soft landing and receiving my PR card. Is it possible to stay in my home country and sponsor my partner from here itself or I need to stay in Canada while I sponsor their visa? And how long does it take to get the spouse sponsorship?

You need to be staying in Canada to sponsor your spouse. No, it is not possible to stay in your home country and sponsor your spouse. Processing times for outland sponsorship are currently estimated at 16 months.
