Spouse OWP after PNP

Hello. This is my situation
- Obtaining a PhD from a university in Ontario in May 2020.
- Wife working full time in a NOC A job
- I am obviously on study permit and my wife is on SOWP, both expiring by July 2020.
- Planning to apply for PR through the PhD stream PNP once I submit my thesis.

Problem:
If I apply for PGWP, I would need a job + pay stubs for my wife to extend SOWP; however, I do not see having a job offer by May 2020 (probably by September I would get one, I am graduating from a degree in education and the summer is dead for those kind of jobs). If we get the nomination sooner than expected, can my wife extend her WP and continue working regardless of my situation? is there any other chance for her to extend her WP?

1. Yes, you would need a NOC A, B or O job and 3 pay stubs for your spouse to extend SOWP>
2. Without the job, she would have to stop working and apply for an extension as a visitor.
