Should I update new itinerary?

I applied visitor visa on 19th Nov with a plan to surprise my husband on 10th Dec. Since the date is approaching and my plan and itinerary will become irrelevant in a few days. Although my return date was mentioned 25th Jan.
Should I raise a webform and update the itinerary? If yes, should I also write a new cover letter?

Depends. If husband is PR then he should have started sponsorship process. You can raise webform but IRCC doesn’t care about travel dates but whether you can show that you will leave (if spouse is PR then probably not). Check IRCC processing times because times have increased.
