Got my permanent resident visa stamped and the expiry is in 3rd week of January 2020. This is too little time for me put everything in order and move. I believe my medicals are valid until May 2020 so I don't know why IRCC decided to give me such a short validity. Is there any recourse to this?

When does your passport expire?

Normally they will give you until when your MEP expires unless there is a specific reason they will provide another date.

I say you already have the PPR, just soft land for the moment.

Passport has around 8 years left on it. I renewed it recently. I'd prefer to just land rather than soft landing. Would it be possible to let IRCC know that I cannot make it and they need to issue me a new visa with more validity? If so, whats the process?

I mean you can raise a webform and see what they say about providing an extension.

I'm not sure how receptive they will be as they'd have to cancel your current PPR, and you'd have to re-submit your passport to them and they'd have to reissue you one along with an updated COPR i presume.

Maybe someone else with some experience regarding this can tell you if there is any specific procedure.

You can always contact the embassy as well and see what they say.

IRCC almost never extends COPR expiry dates. There is no process to request an extension since these requests are almost never considered. You can submit a case specific inquiry to ask - however you should be prepared for the very real possibility that you will need to complete a soft landing in January.

Can you just do a soft landing? I did that as I wasn’t ready to pack up and move before my expiry? Just land for a few days or a week.

That has to he an error on the side of the Canadian embassy in your country because usually CoPR is valid until the expiration date of the medicals
