The duration of my course is 4 terms. Can I show a bank statement covering only 2 terms in addition to the living expenses for study permit application?

You need to show sufficient savings to cover your tuition costs for a full year + $10K in living expenses.

This is in case of he/she applied as SDS. We do not even pay for tuition fee and GIC fee if we apply as Non-SDS
I just wonder, like in my case - Non SDS but I still paid fully tuition fee and even 20,000 CAD for GIC
-> would it be a plus at the point of view of Visa Officer?

Yes, it will be a plus.
No matter what stream you apply under, it's advisable that you pay a full year tuition to show affordability. You should also show readily available funds of 10K whether through GIC or savings account.
