I have read the following:

"Self-employment doesn’t ‘count’ as work experience – This is true for the Canadian Experience Class and for Canadian experience points. However, self-employed work is eligible for the Federal Skilled Worker program, and, if done outside of Canada, for foreign work experience points."

Are the following statements true:

You are required to have at least 12 months full-time continuous work experience for the FSW - You would therefore by default have 1 years CRS points of foreign work experience, otherwise be ineligible for PR via FSW route?

You can accumulate with sufficient evidence 3 years or more foreign work experience CRS points as a self-employed person?

Thank you.

Yes, you need to have at least a year of continuous skilled employment. To claim self-employment you need sufficient documentation, such as "articles of incorporation or other evidence of business ownership, evidence of self-employment income, and documentation from third-party individuals indicating the service provided along with payment details."
