I recently got a fully remote job from a Canadian company. I am currently outside Canada and I plan to be outside Canada for about a year. Will my stay outside Canada affect my permanent residency application?

Are you on a work permit transfer to a Canadian foreign office? You are not in Canada so not meeting residency obligations.

I have been in Canada for two years. I had my education there and I have my Canadian proof of residence. After graduation I decided to move to the US for a year due to personal reasons. I have my post grad work permit and the company is in Canada, but I’m working from the US.

If you are working outside of Canada, then you will be able to count this work experience as foreign work experience. It will not count as Canadian work experience.
