I think the best thing is to write down what you actually do in your job. What are your actual tasks? What are you responsible for? Then go to the NOC and start with the job title you have, expecting that it may not be correct under the NOC. If your duties match closely, choose that NOC. If not, look for related NOCs, even if they are not what your job is called. Choose the one that is closest in responsibilities and tasks, NOT in name.
If possible, you could even get reference letters first, before choosing your NOC (it doesn't matter what you write in your EE application, but it does on your PR application). Using the duties mentioned in your reference letter, go about choosing your NOC. Just remember that you must have had a year's experience in that NOC to be considered under FSW, if that is your category.
