Reference Letter from previous employers - skilled workers Visa CANADA

Hi ,Iam from INDIA applying for CANADA Skilled workers Visa under Insrance supervisors occupation. I worked for xyz company as Insurance subject matter expert.Iam unable to reach the HR to get reference letter at company letter head, my xyz company EX Manager is not currently working for any company , I got a reference letter from my Ex Manager on a white paper and attached her notarized releleving letter from xyz company as a proof that she was in authorized position , I have apoointment letter ,service certificate,payslip and releving letters from my XYZ company letter head ...would this be sufficient ...can I go ahead with that ...I got another question is Income tax file return certificate mandatory while applying
