Would this be problematic? Do I need to get it changed at my interview or does the issuing office (High Commission in London, England) need to send a whole new one? What happens?

I am eager to figure this out because my interview, which I was warned by CIC call centre would be 8 weeks...is only in 1.5 week's time!

Does it matter?

Under BC marriage law, I was told by our commissioner and my reading of the statutes that my wife (who sponsored me) can continue to use either her maiden name or married name as she chooses for different organizations. Her name was not changed by a court of law. While she has applied for a passport under her new name and a drivers license, she maintains her maiden name professionally, on her SIN card, etc.

So depending on the context, her name is indeed either her maiden name or married name. Is it something that would even need correcting on the COPR?
 
It doesn't matter in terms of completing the landing. Some women do legally change their name after marriage. If OP'S wife has done so, then it can be changed at landing.
