We are filing for visitor visa extensions. My children and I are here in Canada with my husband who has a work visa (also filing for an extension). Our visas expire Nov 11 2017.

What is expected for proof of support for our visitor visa extension? We have lived here for 2 years now, would our bank statements be sufficient?

We have to go to the states for 2 months from Oct 31 through Dec 31. Will we be able to re-enter Canada if we if our visas are still in process?

Should we send all of our applications in the same envelope or send them each individually? There are 6 of us, 2 parents and 4 children.

Thank you

Others can comment but leaving Canada on the assumption that your visa extension will be approved seems to me like a big risk to get back into the country.

You should ensure you have a valid visa for your return date before you leave for the US plus nobody here of course can guarantee anyway that even with a valid visa you can reenter the country that always depends on CBSA at the time .
