You have to list all your absenses from Canada, dates and number of days you were gone on your application. They know every date that you entered the country because your passport and PR card is scanned. The dates that you left Canada would be harder for them to know but everytime you come, you fill out on the customs form how long you were gone and maybe they keep those.
