If I do Spousel sponsorship & my wife who is the sponsor gets private insurance from her work if she adds me on to her plan could that affect immigration?

FYI usually you have to qualify for provincial healthcare before you can be added to an extended benefit plan.
My husband was added to my plan while on a vv. His son as well

Did you use the policy? Did you read the policy? One of the usual requirements are for you to qualify for provincial care because the extended benefits don't cover access to a doctor or hospital.

I didnt need to use the policy (thank goodness). I understand why, im just saying in my case we werent asked a thing. I added them and that was that!!
