Are tax doucments regarding -"employment previous to the canadian employment " (employment in home country)-required for CEC ? Or the tax document for the year of work in canada are enough ?

Canada is enough. Employment outside of Canada isn't Canadian work experience, so it doesn't really matter for CEC.
