Hello,
I have recently received my COPR letter and planning to move to Canada.
In my application, I have mentioned my wife & kids as dependents, however choose to opt for " My family not coming with me" so their PR application was not processed with me.
Now I know that I have to come to Canada first then apply for their PR, but what exactly is the process and how can I shorten this process so that they can join me asap.

Thanks in advance.

There's really no way to shorten the process.

As a PR, you must be living in Canada when you submit the application to sponsor them and must continue living in Canada while the application is process (occasional short 2-3 week trips outside of Canada are OK but you should keep travel outside of Canada to a minimum).

They can try applying for a TRV so that they can join you in Canada while the application is being process. However there's no guarantee of approval and quite possible you may have to be separated for 6+ months while their sponsorship application is processed.
