Since your days outside Canada accompanying your Canadian spouse count towards the residency requirements, you do meet them and can renew your PR card. However, you can not apply to renew it more than 6 months before it expires and the application must originate within Canada.
You are kind of supposed to be in Canada to renew your PR card but the rules say you can not be refused solely based on being outside Canada. However, since the application must originate in Canada, you should fill out the application forms and mail them to some Canadian relatives and have them mail them in. Write a cover letter explaining that you do not live in Canada but give a Canadian relatives mailing address for immigration to contact you at. Also send proof of being married to a Canadian and proof of you living at the same address.
Immigration could mail the new PR card to the Canadian mailing address but it's more likely since you are applying from the outside that they'll want to meet you and will request you to come in person and pick it up.
Another option would be not to renew your PR card right now but apply for a PR travel document when you are ready to return and apply for your PR card after you have returned.
