I have lived in Canada for over 3 years now before moving from my home country in Venezuela.
I am currently applying for my PR through express entry.
I know I will need a PC from my home country and Canada.
Now, my mom and I also got Chilean citizenship through my grandfather.
I just got my Chilean passport, and I am using it as my main passport now. I have never been in Chile though, I got it through the embassy.
Do I still need to provide a PC from Chile?

You only need a PC from countries you have lived for 6 months or more. You will not need one from Canada as CIC conduct this themselves.

What will happen in a scenario wherein you have visited XYZ Country several times, and in total the number of Months you stayed is more then 6 however any trip was never gone beyond 3 months.

"In general, you and all the people in your family who are 18 or older need to get a police certificate. You must get one from each country or territory where you have spent six or more months since the age of 18. For example:

if you visited, worked or lived in a country for two months, left for a few years, then returned for four months, that counts as spending six months there. In this case, you would need a certificate."

You would need one ;)

That puts me into lots of trouble as I really do not have any documentation other then the Stamps on my passport as I visited States several times for office work however everything From flight to Hotel was paid by the company so have no receipts for anything and don't even remember the address of the hotels which I stayed in because of several trips, that I will look up on Google, but not sure if they need the receipts as well...

You don't need those... just apply for a PCC for USA as you have been in the country for more than 6 months...
