Do I need to stay with my current employer for 6 months after receiving my Permanent Residency. One of my coworkers told me this but I am quite unsure. If so, does this need to be stated in my Employment letter? Thank you for your help.

Once you are a PR, you can work for any employer. You don't have to stay with them for six months.

It terms of what the employment letter needs to say, it depends on how you are applying for PR and if you are claiming points for having a job offer.
