From what i know. Coop is part of your course work. It carries certain credits and it is compulsory as part of your graduation. Also any Coop job is paid. A coop is something you do for a complete term(3 or more months). Internships generally voluntary, unpaid some companies pay but not all. The duration of internships is not too long (less than a month or 45 days). Also Coop gives a lot more scope to involve in work where as an intern is treated as an outsider, from what i have read Coop gives you that edge to learn more and involve more with the company. Also, Coop in canada is different there are companies which roll out job offers for coop students.

You can get internships by walking into a company and requesting, a coop generally requires a proper process since it is always paid. Also for Coop universities/colleges have tie ups with companies.

A practicum is connected to specific programs, such as teaching, counselling, some health jobs, etc. Other professions have similar periods (articling for law students, residence for doctors). Can be paid or unpaid. It should be a requirement of the program / mandatory.

Remember that in some provinces in Canada, unpaid internships are not allowed. They still exist. If you take one, you may be able to get paid for it afterwards through the government (but the employer will be mad at you and not give you references). ;)
