OK, I did a search on photos and read through many, many posts.
Since there are dozens and dozens of pages on them I soon got tired.

Nowhere did I see anything about notarizing/translating the photos (the back where you write).

If we take the instructions literally at the beginning of Appnedix A (checklist)
we see:

"Send NOTARIZED photocopies of ALL other documents..."
"If your documents are not in English or French, send a NOTARIZED TRANSLATION with a copy of the originals.
These must be done by an official translator..."

So my questions:
Do you translate the; Name, date of birth and relationship to you that you write on the back of one photo for each person?
And then do you get that notarized?

My wife is about to go to the notary.
 
No, you don't need to get photos notarized. Just write the name, date of birth, and relationship to you in English or French in the first place.
