I applied for PGWP in August and receive a submission letter but I now receive a letter today to say that i can work up until 1st March .

What does this mean?

started a bachelor degree full time and took 6 years to complete, took a year off with permission from school . completed program May 2022. i continue to work not knowing that once i received my completion letter i should stop working. i applied for PGWP in August and i receive a letter January 2023 saying that i am authorized to work without restriction on hours until march 1, 2023 or until a decision is made on my application, whichever is first.

can you explain to me what this means? whether my PGWP could be affected by the fact that i work after my completing my program

It seems this is an automated reply. Lot of applicant now when apply for PGWP receive an automated letter telling them they can start working.
however if you took one year off even with permission from your school, I hope you had valid reason and have explained in your work permit application. If not, you can still submit explanation through web form before decision is made.
