In the personal history section in the POST ITA form, is it required to mention all the vacations taken during studies? For example, if a university enrolled student visited another country in their summer holidays, does that have to be mentioned in personal history? I understand it will be mentioned in travel history and address history, but does it also have to be a row in the personal history? How will it be documented?
 
Personal history covers times where you been comitted to studies, work, military service ..etc. You need to mention these vacations on travel history only.

No. Trips need to be included in personal history only if they're the main activity.
For example, if you traveled during your mid-semester break or in between semesters, you don't mention it.
But if for example you took a semester off to travel, then yes you include it.
