Here's what I figure.

If you are a real genuine couple and you are able to prove it to someone who's job it is to weed out the dishonest people then you'll be just fine. But the onus is on you to prove it so that there are no doubts. Do everything it takes.

And if you do get denied the first time, find out the reason why and correct it. Appeal, do anything it takes to be together. Prove that it is completely unacceptable for you two to be apart permanently. Once again Do everything it takes.

I have the same worry as you but I also know they are doing their best to ensure real couples get the fair treatment they deserve.

The refusal rate for spousal applications going through Hong Kong is 49%, but the refusal rate for those going through Beijing is much lower.
A high refusal rate like that means the visa officers are very suspicious. So it is even more important that your relationship looks genuine in all aspects - one more reason to convince your wife to tell her family and friends that she is married.

we are very inlove, and the marriage is real so im not worried about wether we will get it or not, I know that if we dont get it the first time that appeal will prove us a real marriage or if we have to we will appeal again, I just really want to be in canada with my wife and also my family. I love her so much. on the application where it says "what visa office would you like the application to be processed through, for beijing would I simply write beijing or would I write the address? she lives in south china guangdong and I think the applications go through hongkong but I would like to try for beijing as Immigration canada has told us we can choose.

If she lives in Guangdong it will have to go through Hong Kong - unless her hukou is somewhere else, in the area where the applications go to Beijing.
You can only choose the visa office in the sense that if you are living somewhere other than your home country, you can choose the visa office of either your nationality or your residence.
