I'm Canadian and living in the U.S. for over 8 years. I want to sponsor my husband but I'm a stay at home mom taking care of our kids. He works and I don't, so what proof would I show financial support? His stubs, our bank account, etc.

Also, how long (months) from the time of sending off your application did it take to get your visa?

You do not need a job to sponsor your husband.
but you should write a letter to explain your situation and future plan in Canada.

1. if you and family would stay in Canada until he gets PR, you should explain how you would support your family (obviously husband and kids cannot work)
- support from your family or living off saving etc.

2. if you stay in America
- still you need to explain how you are going to settle down in Canada.
VO would request some proof of your future plan in Canada ex: your or your husband job offer in Canada etc.

not sure if you would apply inland or outland.
but you can check out processing time on CIC website.
