I'm a Canadian citizen living in Canada sponsoring my Colombian wife who lives in Colombia. I see that she has the option to declare me as her representative. I'm trying to keep things as simple and straight forward as possible but have no idea which would be the better option. Any experience, opinions in this regard would be greatly appreciated.

Does your wife have a pretty good understanding with filling up the application and providing supporting docs? If no, I would suggest that you put yourself as a free/unpaid representative to avoid issues later on.
