Open work permit after IEC?

Hello.

My IEC visa will expire soon and I am looking at my options.
I have been living with my bf the last 11 months and seen that after 12 months we will be common law.
Is this something we need to apply for?
He has a work permit expiring in 2 years (not IEC), could I get a open work permit for the duration of his permit?

No - common law isn't something you need to apply for. Do you have hard proof that you've lived together for the full 12 months (e.g. joint lease)?

What kind of job does your boyfriend have? Is it full time?
