Because it is a part-time job from a small company, the job duties are kinda simple. I am not sure if this is an issue, while I am 100% certain I fall into the right NOC.
One of my previous jobs only covers 4 out of 11 duties from NOC (NOC5241)

It doesn't matter as long as your four job duties meet the requirements of the NOC. As a matter of fact, almost nobody has a job that perfectly meets all the duties listed on the NOC page.
