Hello,

I noticed that under the Canadian immigration rules, it is possible to satisfy the permanent residency requirements of "living" in Canada by living with my soon to be Canadian wife in the U.S.

Is this also possible to stay eligible for Ontario health insurance, or is there any known way to stay eligible for OHIP while residing part time in the U.S.?
 
The only way to be eligible is if you spent 6 months in Ontario during the calendar year. This would also make you full eligible for income taxes you would owe to Canadian government.

However, you haven't given enough information as to what your status in Canada is.
 
In Ontario, 5 months a year is actually enough to keep your OHIP but you may be allowed to keep your OHIP with even longer absences under certain circumstances, see http://www.health.gov.on.ca/en/public/publications/ohip/longer_absences.aspx

However, if you think this applies to you, you need to clear this with OHIP and get their approval. Assuming that your OHIP is still valid after a long absence and using it could result in charges of health care fraud if caught.

That also goes for the Canadian wife.
