Just out of curiousity, why is the oath invitation letter called the pink letter, during the oath I din't see a single person having a letter even remotely pink, they were all with plain paper letter ! or did I miss something ?

It might vary office to office, when I went to write my test on Sept 8th in Scarborough, there was a Citizenship Ceremony and all people taking the Oath had the Oath letter which was Pink in color hence it is called the pink letter or pinky.
