what if the principal applicant has no notarized employment contracts, but he can secure a reference letter from his employers, previous and present...what is the best way to deal with this.... your suggestions and comments are highly appreciated... i would apply by myself for PR in canada, hence, the query on this situation. thank you very much....Should the specific duties as stated in the reference letter be the same/verbatim as that specified in the NOC Main Duties.......

i wouldn't make it verbatim but dont know if that is okay or not. i presume you don't have an employment contract, not that you can't get it notarized.

If you have no notarized employment contracts, send the reference letter and perhaps ask them to state that no employment contract was given to you. I have a job where no employment contract was given to me (because it is a teaching assistant job at a university) and i had my employer write that in that I was not given an employment contract. I also pointed this statement out in the cover letter to CIC. If one of the required documents cannot be produced, they might ask you to provide other documents later (such as salary slips etc) so they can make sure everything is true....but here, i am only guessing. Good luck.
