So I'm currently in Canada on a 2 year visa, working. I live with my partner, she's sponsoring me, etc etc.

She currently doesn't work due to mental health issues, but I do work. It pays decently, and we can live off it. I know there's no low-income cutoff in our case, but according to the document checklist the sponsor has to "provide other documentation showing that you can support the person(s) you are sponsoring"

But...I don't need support. I have a job. Is it enough if I write a letter stating that I am employed, in good standing with my employer, no plans to leave soon, and attach a couple payslips?
I'm applying for an OWP so I won't have to quit when my 2-year is up. My partner is doing sessions with an employment counselor and may even have her own job in a few months, but I can't wait that long to submit.

The sponsor doesn't need to have a job. Many sponsors are stay-at-home parents, students, unemployed, retired etc. IRCC will look at the family income/savings. Are you currently supporting her or is she on disability?

I'm supporting her. We considered getting her on disability but the process seemed iffy - apparently it required signing up for general "benefits" first and we didn't want it to cause her to be rejected as a sponsor.

That's fine. Show your proof of income and any savings and explain in a letter that you support the household. No need to mention anything about her health issues.

Well 4 months from now (to get OWP) is end of September/early october, and my permit runs out October. Is the OWP usually a firm 4 months or is that the absolute max it usually is?
It is quicker these days. It doesn't matter if the OWP takes longer. You will have Implied Status and be able to keep working.

Well I'm on an IEC permit, which being non-extendable, means I can't work even on implied - I can remain in Canada but not work (as far as I know - apparently it's a common mistake for IEC people to assume their implied can let them work). Could be mistaken though.

In any case, its good to know it's quicker.

Incorrect, this was recently clarified by IRCC.

Who has implied status
You have implied status if, before your work permit expires, you apply:

Who can work under implied status
If you have implied status, you can keep working if you’ve applied to extend your stay in Canada as a worker. However, you can only keep working:

  • for the same employer
  • under the same conditions, and
  • if you stay in Canada
If you applied for a different type of permit, like a study permit, you can stay in Canada under implied status but you can’t keep working.

Oh, wunderbar. This is good news. Thanks!
