I'm going to be sponsoring my fiance once we are married next month, and I checked here http://www.canadavisa.com/necessary-income-levels-for-family-sponsorship.html about the minimum necessary income requirement, and would this apply to my sponsoring my future husband? Where it says "Size of Family Unit", is that including myself or is that the number of people I'd be sponsoring? If it's the number of people I'm sponsoring, it doesn't list just one person except under the Quebec table. I am living outside of Quebec so that table does not apply to me.

If anyone could clear this up and let me know what the minimum necessary income requirement is to just sponsor my spouse, that'd be wonderful.

There isn't a minimum for sponsoring a spouse. You will have to prove and explain how you will support your spouse (employment pay stubs, family support, etc.) but there isn't a minimum you need to be making.
 
Actually I have one more question. If I provide my pay stubs, will they be sent back to me where I will be needing them for income tax?

I would just send a photo copy. Or take a photocopy for your records.
