Hello! I have a girlfriend of 3 years. And I am planning to marry her this year not until we saw an opportunity for me to study in Canada for next year intake.

but i am torn what path should i select for her to also come with me.

A. I will apply as single, land as single then during term break i will to back to India and marry her. Then i will go back to Canada then help her process her Open Work Permit. How long will it take?

b. I will apply as single, get the visa, get married,declare to border officer that my marital status has changed? Then after x months will apply for my wife’s OWP. Will there be issues in the border?

c. I will apply as single, land as single. My fiancee will come to Canada as visitor. We get married in Canada. Then we will apply for inland spousal open work permit for her.

An OWP is not guaranteed for spouses of international students.

Congratulation for upcoming marriage

A. This is person question, you don't expect advice from public. Your can go ahead and marry anytime you think is best
B. Border won't be interested to know your change of status provided you were approved. They will look if you meet conditions to be admitted to CA
C. This depends if your future wife meets conditions to be granted Visitors visa.

Overall both options requires both of you to meet both economic, social and immigration requirements. Provided you don't have SP yet, You need to decide on which comes first. Marriage or Studies or both.
