I'm having trouble understanding what to do on question 3 part 1 of the Application to sponsor form. My wife still resides in china, the question asks if there is a co sponsor on this application Then it states (co singer must be the spouse of the sponsor) since she is in China she can't sign the form/ Should I answer YES or No

no, the applicant can not be the co-sponsor. The co-signer spouse is in the case a husband and wife (or common law partners) are BOTH sponsoring a third person for PR status (ie: parent or child) In this case, you are the only sponsor, and there is no co-sponsor.

Likewise on the applicant forms, there will be references to "spouses" and "family members" needing to fill out forms. Again, this is only when a husband and wife (or partners) and dependants are being sponsored together in the same application. This does not refer to the spouse who is the sponsor or family members who are not immigrating (parents, siblings, etc.).

Somehow this is confusing and makes sense at the same time.
