List work exp for which you cannot produce job letter ?

Hey guys,

I was filling the application online for CEC. Should we mention work experience for which we cannot produce job letter ? The company is long closed.

Also, I was nominated via PNP and filed my application for CIC using PNP and now also submitting via Express entry PNP nominated.

Also, for all work exp we list - are they going to ask for proofs ? can someone tell me what the process will be further down
