When you are in Canada as visitor and your leave the country to your home country by Plane, do you pass for any Border Agent in Canada? Last time I was in Canada, when I decided go home, I drove until USA because my flight was leaving for NY. I just was checked by US Agents when I entered in USA, so in this case the Canada doesn't know when I left the country right? But my question is: And if I leave Canada by plane my passport will be checked and stamped by the Canadian Borders Agents or this just happen when I arrive in my country?

There are no exit controls in Canada.
 
There are no immigration exit controls but when leaving by plane but CBSA could find out after the event whether you left or not if they wanted to through access to passenger flight manifests. CBSA and US CBP do exchange information when required on land border crossings so in either case plane or land if CBSA wanted to find out specifically an individuals movements they could in most cases.

Let's imagine that you are in Canada as Visit for 3 years and you got enough points (460) for Express Entry. If you leave the country before the Draw, how can they know that you lived illegal for 2,5 years?

Your friend is incorrect. You cannot apply for EE if you are currently living in Canada without status. However if you have lived in Canada previously without status - this isn't a problem.

They will know you lived in Canada illegally because US and Canada share immigration information.

You must be 100% honest in your application about your immigration history in Canada. If you are honest, it will be forgiven. If you lie, your application will be refused and you'll most likely be charged with misrepresentation and banned from Canada for 5 years.

Suggest you stop listening to your friend. They have no idea what they are talking about and are giving you very poor advice.

By the way, any sort of work done in Canada while without status cannot be credited for any points in Express Entry. So let’s just assume your hypothetical scenario had their points earned prior to the illegal stay.

Everybody knows that. But the qustion here is that some one can stay doing whatever they want and practicing English to ace on IELTS and apply for Express Entry even had lived without status in Canada.

Yes - they can do that. However they would need to leave Canada before submitting their EE application. Also, in their EE application, they would need to be 100% honest about their immigration history in Canada.
